Making coffee isn't just about flat whites and espressos. When you dive into the wonderful world of filter brewing, you quickly realise that it is a cost effective and minimalist way to prepare your morning cuppa, as well as an outstanding way to showcase the best that the coffee world has to offer.
With this course you will gain access to a suite of video content that will kickstart your learning to get the best out of your time with us. What this means is you will spend more time brewing, tasting and learning in class with us and you can digest the theoretical side before and after the session to become an even better brewer.
We focus on the 'pour over' method, but will teach you everything you need to enjoy the entire spectrum of filter beverages, whether it be at home, in the café or anywhere else you can plug in your kettle. We also give you a thorough overview of all of the key variables that affect your brew, such as bean selection, coffee recipes, and many more.
In this course, you will learn:
- Choosing the right beans for the best brew.
- How different brewing methods and techniques affect flavour.
- Analysing taste and adjusting your recipe for improved results.
All classes are limited to two participants & you will receive a Certificate of Achievement at the completion of the class.

ONA Coffee Trainers:
All ONA Coffee trainers are highly experienced in producing top quality coffee and are running courses designed Hugh Kelly, Australian Barista Champion 2016 and 2017.
- Experiencing different varietals, processing methods and the unique traits of specific growing regions.
- Introduction to manual brewing equipment; Analysing the correct flavour
- Tweaking the recipe or the technique to achieve the correct flavour
- You will receive a Certificate of Achievement at the completion of the class.
- Filter Coffee Courses are limited to four participants.
All SYDNEY based Barista Courses are held in our new Barista Training Facility at ONA Marrickville 140 Marrickville Road, Marrickville NSW 2204. Please arrive five minutes prior to your scheduled class time.

Having been an avid drinker of ONA coffee, I was excited to learn about filter prep from them. Hugh and Jay were both friendly and knowledgable and gave good advice on how to dial in coffee (where to start, what to tweak, etc). The class was mostly practical with a station per person so we could properly learn and improve on our pour technique. We brewed several different coffees and were able to taste the differences between each, as well as how factors like grind size might impact the same coffee. We finished with improved skills and a recipe we could easily replicate at home. Also, as this class took place during COVID-19, it was nice to see the cafe / lesson had strictly adhered to social distancing rules (QR code at the door, space between stations, hand sanitiser available).
